Harvested on 10/12 from Mission Ranch Vineyard in Arroyo Seco AVA, the grapes were gently pressed and fermented in Stainless Steel for a month before being racked and allowed to age for a few months before bottling. The 2021 growing season was unique in that the vineyards that saw morning fog in the region had extremely high acids as compared to those that were usually sunny all day. Winemakers like acid in grapes, and it was a dream to have most of our vineyards with the same great “problem”. To make wines that aren’t overly acidic, however, we needed to give the grapes more hangtime and pick them nearly two weeks later than our historical harvest date. Cabernet Sauvignon came into the winery before we finished picking Pinot Noir – something that hasn’t happened in the 8 years we’ve made wine here at Folktale.
